I do actually make them. It’s a compulsion. Although I did recently discover some excellent vegan recipes using ingredients like beets. I did this non-vegan one for my sister’s engagement brunch in NYC:

Adorned with Arnosky Farms’ amazing flowers, this cake was among my all time favorites. The top layer was gluten-free and the filling was vanilla, marzipan and Harvest Time Farmstand strawberry jam.

I began freezing Lightsey peaches for this cake in summer. The happy couple chose organic vanilla-bean buttercream with a dash of peach brandy. Zing!
